Cava

Named after the caves in which the wine is made, Cava is a refreshing style of sparkling wine from Catalonia, Northeastern Spain. The three principal grapes in Cava are Macabeu, Parellada and Xarel-lo, although small amounts of other varieties are also allowed. Cava is Spain’s answer to Champagne - quite literally.

The history books tell the story of Josep Raventos, a pioneering young Catalan who brought the famous méthode champenoise back to his homeland in 1872 after a trip to France. At that point in history, vast swathes of the vineyards in France and wider Europe were being wiped-out by a plague of the harmful pest; phylloxera. The problem threatened to bring the entire wine industry to its knees. Josep knew that back home in Catalonia, many vines remained unaffected by the pest. And so, by bringing the traditional French methods back home to his native Spanish soil, Josep enabled the winemakers of Catalonia to fill the gaps in supply, and thus was born Cava.
