Strawberry Mojito Recipe

One of our favourite drinks on a hot summer day is a good mojito. Sugar, mint, rum and lime - it's heaven in a glass. The mojito is practically a perfect drink in every way, so what could possibly make it better? A little seasonal fruit, like strawberries! Sweet seasonal strawberries, like the ones available now, are perfect for this refreshing Strawberry Mojito recipe, as they are an excellent accompaniment to a mojito's sweet, sour, minty flavour.

Whether you’re impressing guests, organising date night or hosting a fun-filled girls night, our Strawberry Mojitos are the definition of a crowd pleaser. We recommend using Bacardi but any white rum will do. White rum is clear, like vodka, and has a subtle, sweet flavour. It appears in a lot of classic summer cocktails that we know and love.

We recommend the following tools if you're going to make a mojito. You can do without them, but they'll make the job a lot easier and faster, and will probably come in handy for other cocktails too! First, a muddler, which can be made from wood, metal, or rubber. When you use a muddler to smash fruits and herbs, it brings out their flavour. You can use the back of a spoon to do the job, but when it comes to cocktails like mojitos a muddler really is best. Second, a citrus juicer may also come in handy for this recipe. If not, shop bought juice will be fine too.

  • 1 ounce (30 ml) strawberry syrup
  • 3 fresh strawberries
  • 2-3 fresh spearmint sprigs (chopped if you prefer smaller mint pieces in your cocktail)

  • 2 ounces (60 ml) white  rum
  • 3-4 ounces (90-120 ml) soda water

    1. In a chilled highball glass (about 10-12 ounces), muddle the simple syrup, strawberries and mint leaves together with the back of a spoon or muddler. Crush the strawberries and mint leaves well.
    2. Stir in the lime juice and rum. Fill the glass with ice and top off with soda water. Gently stir.
    3. Garnish with mint sprigs or strawberry slices.
